A high-fiber and high-protein bread that uses no traditional flour. It is easy to prepare, foolproof, and can be customized with various seeds.

Ingredients

  • Sunflower seeds 50 g
  • Flax seeds (ground) 50 g
  • Wheat bran 50 g
  • Protein powder (neutral) 50 g
  • Eggs (size M) 2
  • Low-fat quark 250 g
  • Baking powder 1 tsp
  • Salt 1 tsp

Preparation

  1. 1

Preheat the oven to 200 °C top/bottom heat.

  2. 2

Mix 50 g sunflower seeds, 50 g flax seeds, 50 g wheat bran, 50 g protein powder, 1 tsp baking powder, and 1 tsp salt in a bowl.

  3. 3

Add 250 g low-fat quark and 2 eggs to the dry ingredients.

  4. 4

Knead all ingredients into a uniform dough.

  5. 5

Let the dough rest for 10 minutes so the flax seeds can swell and the mixture becomes firmer.

  6. 6

Shape the dough into a loaf of bread.

  7. 7

Line a baking sheet or wire rack with parchment paper and place the loaf on it.

  8. 8

Optional: Score the loaf about 1 cm deep with a knife and sprinkle with additional seeds if desired.

  9. 9

Bake the bread in the preheated oven for 40 minutes.
