Bread Dumplings (Basic Recipe)
by Tavolino
Classic, fluffy Austrian-style bread dumplings. They are the perfect side dish for saucy dishes, roasts, or smoked meats and can be wonderfully varied with herbs or bacon.

Ingredients
- Bread cubes for dumplings 250 g
- Milk 250 ml
- Butter 50 g
- Eggs 2 pieces
- Salt 1 tsp
- Nutmeg 1 pinch
- Parsley (fresh) 1 bunch
- Onions 1 piece
- Flour 2 tbsp
Preparation
- 1
Melt the butter in a pot and mix with the milk.
- 2
Place the bread cubes in a bowl and pour the butter-milk mixture over them.
- 3
Let the mixture soak for 20 minutes so that the bread absorbs the liquid completely.
- 4
Meanwhile, finely dice the onion and sauté in a pan with a little butter until translucent.
- 5
Finely chop the parsley.
- 6
Add the eggs, salt, nutmeg, diced onion, and parsley to the soaked bread.
- 7
Mix everything well. If the mixture is too moist, knead in a little flour until it binds.
- 8
Form dumplings from the mixture with moistened hands.
- 9
Bring a large pot of salted water to a boil.
- 10
Carefully place the dumplings into the boiling water.
- 11
Reduce the heat and let the dumplings simmer in the water for approx. 15 minutes.
