- Sugar 150 g
- Flour 2 tbsp
- Semi-skimmed milk 1 L
- Lemon to taste
- Cinnamon stick 1 unit
- Sugar for caramelizing to taste
Preparation
- 1
In a bowl, mix 150 g of sugar with 2 tbsp of flour.
- 2
Add the 7 egg yolks to the sugar and flour mixture and whisk well until you have a smooth cream.
- 3
In a saucepan, bring 1 L of semi-skimmed milk to a simmer with the peel of 1 lemon and 1 cinnamon stick.
- 4
Let the milk simmer over low heat for 5 minutes to infuse the flavors.
- 5
Remove the cinnamon stick and lemon peel from the milk.
- 6
Pour a little of the hot milk over the egg mixture, stirring constantly so as not to scramble the eggs.
- 7
Incorporate the remaining milk gradually, stirring continuously.
- 8
Return the mixture to low heat, stirring constantly until it thickens slightly.
- 9
Remove from heat and pour the cream into a serving dish or individual bowls.
- 10
Let it cool completely at room temperature before placing it in the refrigerator.
- 11
Sprinkle the surface of the cream with sugar for caramelizing.
- 12
Burn the sugar with a hot iron or a kitchen torch until a crispy crust forms.
