Low-Carb Big Mac Roll
by Tavolino
A low-carb alternative to the classic burger, where a savory quark-cheese mixture serves as the dough base, filled with ground meat, cheese, and a tangy sauce.

Ingredients
- Low-fat quark 250 g
- Grated cheese 100 g
- Eggs 3
- Ketchup 2 tsp
- Mustard 1 tsp
- Plain yogurt 2 tbsp
- Ground meat 250 g
- Salt 1 pinch
- Pepper 1 pinch
- Processed cheese (slices) 3 slices
- Pickles 3
- Lettuce 1 handful
- Tomatoes 1
Preparation
- 1
Preheat the oven to 180 °C top/bottom heat.
- 2
Mix 250 g low-fat quark, 100 g grated cheese, and 3 eggs into a thick batter.
- 3
Spread the mixture evenly on a baking sheet lined with parchment paper.
- 4
Bake the dough in the oven for approx. 20 minutes and then let it cool completely.
- 5
For the sauce, mix 2 tsp ketchup, 1 tsp mustard, and 2 tbsp plain yogurt in a small bowl.
- 6
Brown 250 g ground meat in a pan with salt and pepper until crumbly.
- 7
Slice 3 pickles thinly and add them briefly to the ground meat in the pan.
- 8
Spread two-thirds of the sauce over the cooled dough.
- 9
Distribute the warm ground meat over the dough and place the 3 slices of processed cheese on top so they melt slightly.
- 10
Distribute the lettuce and sliced tomatoes over the ground meat.
- 11
Drizzle the remaining sauce over the filling.
- 12
Using the parchment paper, carefully roll the dough into a tight roll.
