An authentic, flavour-packed guacamole that uses a mortar-and-pestle technique to create a base paste, ensuring the onion and chilli flavours are perfectly distributed throughout the creamy avocado.

Ingredients

  • ripe avocados 3 large
  • white onion 2 tbsp, finely chopped
  • fresh coriander/cilantro 1/2 cup, chopped
  • jalapeño or Serrano chilli 1-2, finely chopped
  • salt 1/2 tsp (or to taste)
  • lime juice 1 tbsp (or to taste)

Preparation

  1. 1

Finely chop 2 tablespoons of white onion, 1/2 cup of fresh coriander, and 1-2 jalapeño or Serrano chillies.

  2. 2

Place the chopped onion, chilli, and half of the coriander into a mortar.

  3. 3

Add 1/2 teaspoon of salt to the mortar.

  4. 4

Grind these ingredients together with a pestle until they form a smooth, uniform paste.

  5. 5

Halve and pit the 3 large ripe avocados.

  6. 6

Scoop the avocado flesh into the mortar with the paste.

  7. 7

Add 1 tablespoon of lime juice to the mixture.

  8. 8

Mash the avocado into the paste using the pestle until you reach your desired consistency.

  9. 9

    Fold in the remaining coriander.

  10. 10

Taste the guacamole and adjust seasoning with extra salt or lime juice if needed.

  11. 11

    Serve immediately while fresh.
