Traditional Bolinho de Chuva
by Tavolino
A comforting classic of Brazilian cuisine, these fried dumplings are soft on the inside, slightly sweet, and finished with a crunchy cinnamon-sugar coating.

Ingredients
- Eggs 2 units
- Sugar 1 cup
- Milk 1 cup
- All-purpose flour 2 1/2 cups
- Baking powder 1 tablespoon
- Sugar for dusting 3 tablespoons
- Cinnamon for dusting 1 tablespoon
Preparation
- 1
In a large bowl, beat the 2 eggs with 1 cup of sugar until the mixture is smooth.
- 2
Add 1 cup of milk to the mixture and incorporate well.
- 3
Gradually add the 2 1/2 cups of all-purpose flour, stirring constantly to avoid lumps.
- 4
Finally, add 1 tablespoon of baking powder and gently fold it into the batter.
- 5
Heat enough oil for deep-frying in a deep pot.
- 6
Using two spoons, shape small portions of the batter and drop them into the hot oil.
- 7
Fry the dumplings until they are golden brown on the outside and cooked through on the inside.
- 8
Remove the dumplings with a slotted spoon and place them on paper towels to absorb excess oil.
- 9
In a shallow dish, mix 3 tablespoons of sugar and 1 tablespoon of cinnamon.
- 10
Roll the warm dumplings in the cinnamon-sugar mixture to coat the entire surface.
